The high holidays are upon us, encouraging all manner of indulgences. And over-indulgences. Thus today’s word: SATIATE

Our WordBowl Word of the Day comes from the twisted brain behind Henry’s Games — storytelling? satire? legend? — all I can confirm is (1) the word came from a UK e.mail address and (2) the author purports to be male. Though this may be a matter for debate as well.

Earliest food memory: gorging on pineapple, sticky sweet juice slicking down chin, mouth raw, the first conscious twining of pleasure and pain.

My mother, worrying I might hurt myself, attempting to lure my attention with promises of Cocoa Puffs. I was not dissuaded. If one bite proved scrumptious, surely gobbling the whole pineapple — a gift from my father, souvenir from his team’s annual exhibition game in Hawaii — would provide exponential happiness.

I munched, Mumu-clad — my mother had made us matching Mumus, a riot of red and white florals, the year she jetted off for the Luau Game, too — my own celebration of culinary and sartorial extravagance, those partners in crime.

At almost four years of age, I had not yet learned the law of diminishing returns, the irrefutable scientific facts: sugar-on-sugar becomes less sweet, salt-on-salt less satisfying. Of the tastes, only bitter becomes increasingly, more intensely of itself. Bitterer.

My father retired from baseball, we moved through familial lands in Texas, Louisiana, settled in Mississippi. Food, tightly regulated in our 1970s household — recession, sprawling family, father still hewing to preparatory extreme eating and exercise regimes as though his civilian professional performance depended upon it, mother wrestling her five-pregnancies-and-counting weight gain via the fashionable fasting plan du jour — there was no such thing as snacking between meals, desserts regulated to weekends, although my siblings and I snatched surreptitious chocolates from our mother’s hidden stash, all the more delicious for being forbidden fruit.

Our brown-bagged lunches featured Oscar Meyer Variety Pack deli meats, “Red Delicious” apples rarely either. Dinners, a parade of broiled chicken/buttered rice/frozen vegetable permutations or variations of noodles with canned sauces, this less sophisticated era, we ate noodles, we did not yet know from pasta. We did not dine in restaurants, McDonald’s a rare splurge, sign of an unexpected financial windfall, or a brother’s Little League triumph.

My siblings and I dreamed of the packaged food in our friends’ homes, envied their unrestricted access. My burgeoning babysitting business — leveraging my oldest child caretaking skills into actual cash — built upon my fascination with other people’s pantries. Covetous of what I had not experienced, craving tastes of my imagining.

As I verged on adolescence, my parents hit a rough patch, arguments burst from behind their bedroom door, tempers flaring dramatic throughout our home too modest to house hiding places, a spectacular one-upmanship of slammed cabinets, tossed tennis racquets, my mother grabbing car keys and me, gunning the Plymouth all the way to Pizza Hut for multiple trips to the sneeze-guarded salad bar and an array of Personal Pan Pizzas, furious munching before barreling to the Mall, plowing past the seasonal displays towards the clearance racks — even at her most enraged, my mother mindful of her role as keeper of the family finances, her calculator of a brain tick-tick-ticking discount percentages and layaway plans —sorting through those sad stragglers available at greater-than-fifty-percent discount, haughty tossing of the too-big oh-my-goodness-this-just-swallows-me attempting to rationalize the too-small as perfect-j-just-as-soon-as-I-lose-five-pounds. Pizza and salad topping torpor settling in, ambling over to the shoe section — score! — fit not an issue, as our feet remained the same size no matter how much we stuffed ourselves.

Full, but far from satisfied.

 

 Inspired, I set about satiating myself uptown-style at the farm-to-table The Grange Bar and Eatery (hamilton heights, harlem) where I sampled craft cocktails and admired the extensive list of local microbrews while scribbling the first draft of this story. Trundling back downtown, I hand-edited with a Thai Cold Brew Coffee at the light-drenched Greenwich Village outpost of Stumptown Coffee Roasters (greenwich village, manhattan).

In honor of today’s celebrations of friends, family, and food, a Thanksgiving WordBowl Story:

While Christmas preparations commenced in earnest while we were still polishing off leftover Turkey sandwiches oozing with cranberry-slathered stuffing, Thanksgiving itself seemed to sneak up upon us. My mother frantic, me at her elbow, eventually side-by-side, kitchen maelstrom fraught with urgency of emergency, as though in the midst of creation rather than recreation of our time-honored meal, my father a stickler for tradition.

Day of, mother up at dawn, tussling with turkey that would be carved before hitting table, our Thanksgivings lacked for show-stopping Kodak moments. Sideboard groaning with French bread dressing, cornbread stuffing courtesy of Pepperidge Farms, sweet potatoes topped with pecans, brown sugar, miniature marshmallows — more Thanksgiving s’mores than vegetable dish — yams mashed tart with orange juice, Uncle Ben’s wild rice, creamed spinach with crisp parmesan crust, green beans swimming in Campbell’s Cream of Mushroom topped with fried onions sprung from a can, cranberry sauce from scratch, giblet gravy congealing in porcelain boat.

My first turn hostessing Thanksgiving thrust upon me senior year by my college buddy SVF — already graduated, nominally employed — who invited himself for the weekend, arrived Thanksgiving Eve, horrified to discover I had yet to shop. After a couple of drinks we hit Dominick’s, out of luck when it came to fresh cranberries — I refused to entertain the canned suggestion of the solitary stock boy sweeping the aisle — but otherwise we were well-stocked to recreate my mother’s annual feast, with the addition of brie slathered in apricot jam and baked in puffed pastry, an unctuous melding of savory and sweet served at a sorority sister’s family holiday party, which I considered the height of sophistication.

We swung by the all-night video store — this the era of film buff video clerks judging VCR rental choices— to stock up on movies, too. Up at crack of dawn to get the turkey trussed, racked. SVF stumbling down for the Inaugural Bloody Mary, cooking interspersed with Hitchcock double-header. Joined by my collegiate BFF and stragglers who called in hopes of something happening, the perpetually-tapped keg on my porch the stuff of campus legend. We ate ourselves beyond silly, settled in for Willie Wonka and the Chocolate Factory, toasted to our adulthood.

Post-college San Francisco, refurbished Victorian, three roommates playing grown-ups, guests marveling at our butler’s pantry. Blood Simple, Hitchcock. Another year, another apartment, sweeping views of the Golden Gate, a vegetarian, a vegan, several avid carnivores and a last-minute guest from Piemonte who argued with me over proper risotto preparation. Someone ended up with a salad plopped atop their head.

What would be the final San Francisco feast, 20 guests, my producing partner and I trading drafts of a grant proposal between kitchen shifts. Familiar mix of artists, engineers, animators. Last minute guest from NASA. Movies, probably something artsy before the now-obligatory Hitchcock.

New York, New York, Thanksgiving in restaurants, late night movies solo, Netflix queue manipulated in anticipation. Upstate, once San Francisco compatriots migrated east in search of an affordable artful life, my culinary responsibilities reduced to a single dish.

Coupledom, our own traditions. Bloody Mary breakfast, theatre movie matinee, Peking Duck snacks.

Post coupledom, family tradition, albeit that of my best friend from college, the family who long ago introduced me to French dining and — after a Pretty Woman moment — how to properly eat escargot. All of us now tending toward grey. High-rise with a view, exquisitely prepared dishes, discreetly decanted wines. Post-meal, collegiate BFF slumber party, scanning OnDemand for a movie, reminiscing about the original Willie Wonka, debating favorite Hitchcock.

I am thankful for all the bartenders, proprietors and hospitality folks who support WordBowl by providing me spaces to write, and scrumptious inspirational treats to accompany the scribbling. This holiday posting was written at two of my go-to spots: Dear Irving for cocktail inspiration from the Dream Team, and Elsewhere Espresso for fuel to finish.

On my annual Southern Sojourn (states visited: Louisiana, Alabama, Florida, Mississippi), my siblings and I are telling childhood tales to my 15 nieces and nephews still young enough to find the notion of us as children fascinating.  “The Happy Willow” featured in more than one story, which sent me scurrying through the WordBowl archives for this piece, PATIENCE:

Our Word-of-the-Day is one of the very first suggestions submitted to WordBowl, delighted I drew it at last.  From the indomitable (and patient!) Amy Willstatter, media-maven, Moxie-Mom, early-edge entrepreneur.

My mother gave birth to two boys as we idled in Houston waiting for my father — retired from MLB at twenty-seven, in need of a new vocation — to plow through pharmacy school; she gave birth twice again as we settled in Mississippi, waiting for my father to inherit a family business.

Great Uncle Ted and Great Aunt Myrtle instigated this scheme for their retirement, for my father to assume his “rightful” role.  They oversaw the construction of our new home, a symbol of our no-longer-peripatetic, now rooted life.

My parent were no BabyBoomHippieCommuners, but the virgin backyard evoked some dormant bucolic dream, they drew up plans, tilled vegetable beds, planted snap bean bushes instead of hedges along the chain link fence. They selected saplings to supplement the towering, spindly pines, these new trees would grow, they claimed, to shade the bay window in the kitchen, Japanese Maples and Magnolias would in time cast dappled shadows on the terraced walkway, a willow would one day weep majestic in the back yard.

Between gardening sessions, my father taught me to throw a baseball, insisting I throw from the shoulder, like a boy, none of this girly from-the-wrist business. Hours we spent throwing, pitching balls to imaginary batters, or, one season, to knock slugs off the tomatoes, the year of an infestation no pesticide proved powerful enough to kill. We planted watermelons that year, too, which grew round as bowling balls and tasted just as sweet.

One year begat a bumper crop of snap beans, our family jammed around the kitchen table, snapping beans until our fingers reddened, an endless parade of beans at dinner, beans swimming in stewed tomatoes, beans glistening with butter and Morton’s salt, beans slathered with cream of mushroom soup, beans with diced frozen carrots, their uniform color and symmetry in sharp contrast to the beans snapped by fingers of varying sizes and strengths, beans boiled, frozen in plastic bags, thawed, cooked limp.

Trees grow more slowly than children, my city-bred parents discovered, and in order to weep, willows must be planted near water. We had maples only slightly taller than the snap beans or my young brothers, magnolias that bore a single blossom, and what we forever dubbed The Happy Willow, branches reaching uproarious to the sky.

The passion for gardening faded, beans supplanted by proper hedges, tomato beds replaced with flowers, sapling-sprouted trees watered and pruned with more prayerful hope than confidence.

PatienceEditGreat Uncle Ted staved off retirement for another year, and then another, my father his second-in-command. My brothers grew, eager for their presumptive baseball birthright, my father taught them to throw, to hit, to catch, the proper way to slide into third, games in which they took turns as pitcher, batter, catcher, shortstop, The Happy Willow serving as second base.

I graduated from college before my father assumed ownership of the family business, inherited the family home with its stoic, stately trees shading the bay windows, just as my parents once envisioned growing for themselves.

Morning ritual, double espresso with a sidecar shot of Fernet Branca, a combination my Italian bosses assured was a most balanced breakfast: Fernet to settle the stomach, espresso to jumpstart the brain. It was my post-collegiate job, the stopgap job to cover rent while stuck in the interview loop for the dream job newly minted graduates presume awaits, I assumed all sophisticated big-city grown-ups — unlike my parents, or those of the kids I babysat in high school — kicked off their professional days in some analogous spirit, an unspoken rite of passage into the secreted world of professional adulthood.

This is what greets you at      The Happiest Hour

Rude awakening, my first magazine job, expected to fetch and pay for my own Americano, and no restorative amaro in sight. Not that a little alcohol was foreign to this work environment, either. Our tight-knit crew — in the time honored tradition of journalism melding with the emerging ethos of tech startups — decamped from office to bar, debating the fates of technologies and companies spotlighted in our pages, or arguing over sales tactics or angling for attention from higher-ups at the competing publications we consorted with after hours in a succession of favored watering holes who courted us with complimentary shots but unfailing failed to fill our water glasses. Mornings, we were left to our own devices, groping through the ritualistic San Francisco fog, attempting to placate our churning stomachs with socially acceptable foodstuffs, deadening bagels slathered with spread, chocolate muffins, egg-and-cheese sandwiches. Breakfast breads thudding in our guts like daily dread.

Although I admittedly had an affinity for all things Italianate after spending my fifteenth birthday getting drunk with a monk en route to Rome, my first immersion into cultures not my own, I suspected the Italians were on to something with their appreciation for the inherent powers of food, beverages to heal, nourish with none of the associated guilts.

My own dietary habits distinctly American, shaped by 1970s childhood convenience foods, uniformly-sized Bird’s Eye vegetables, Mrs. Paul’s Fish Sticks, Pillsbury biscuits popped out of a refrigerated tube. Upon turning teen, I graduated to my mother’s diet of skinless chicken breasts and Fresca, SlimFast shakes and grapefruit, sugar free gum to stave off food cravings. Years of mother-daughter trips to sneeze-guarded fast food salad bars for insipid vegetables we drowned in Ranch dressing and sprinkled with cheddar cheese confetti as we congratulated ourselves for passing on French fries, weeks of cabbage soup and liquid fasts interspersed with Pizza Hut and Girl Scout cookie binges, a cycle as predictable as the seasons.

“Healthy” equated with substances consumed, a state to attain, a moral badge of courage. Something to be soldiered through. Clever corporations divorced “health” and “diet” from their original meanings, leaving a national trail of bitterness and regret in their wake, marketed foodstuffs to ameliorate the pain. Dazzling scientific breakthroughs — we can have our cake and eat it too! — SweetnLow-Aspertame-Stevia, Tab-DietCoke-CokeZero, Snackwells, Lite Beer. When it comes to diet, even the most fervent religious practioners ascribe to science as salvation. Science, who would deliver us from moderation.

I grew up, the years sped by, our Information Age boomed, insatiable. Nutritional science — once the domain of prim HomeEc teachers — conscripted by Big Food, Pharma and co-opted by telegenic physicians, lifestyle gurus. Every day, hour, breathless news cycle, another pundit, talking head touting the latest controversial findings — controversy, the Holy Grail of Clicks — the magic bullet of health (re: thin, beautiful) or it’s second cousin, longevity. Breakfast, the most important meal of the day, or not, the contradictory research persuasive enough to support an individual’s preference. Coffee, red wine, salt — Himalayan Pink, specifically — re-labled, fat-free falls from fashion. Bullet Coffee! Cold Press Juice Fasts! Goji Berries! ChiaSeedsTigerNutsCoconutOil. The incredible, edible egg.

Data whiplash.

A sneaking, subversive suspicion snaking through overwrought brains: our grandparents might have had it right all along. Know where the food comes from (better yet, know who grows it). Eat your vegetables (preferably, in season). Indulge in moderation. Take a brisk walk, allow a moment of meditation or giving grace. And raise a toast, with loved ones, in celebration of this one life we have to savor.

Whipsawed by the fickle East Coast weather this “spring”, I ducked into The Happiest Hour (west village, nyc) to scribble notes for this “salubrious” story. And what a happy hour it was! Familiar cocktails with unexpected (yet accessible) twists, AND complimentary French fries to rival the McDonald’s of my youth. Scrumpdillyicious. 

Crafting this piece took several tries (some days, the muse plays coy), so I popped into Amor y Amargo (east village, nyc) for a taste of inspiration during their weekends-only Double Buzz (coffee cocktails, genius) for an iced-coffee and Amaro pairing. Breakfast of Champions, my friends.

His first holiday as an adult not spent sweating in an industrial kitchen or slinging drinks behind a bar. Sure, he wishes he had the cash to take her out, but scratch is scarce during this in-between — quit a job without another lined up, stupid prick — but he’s sorted now, new gig starts New Year’s and he’s conjured an ideal meal, complete with champagne, the real stuff, a bottle comp’d by an ambitious beverage sales rep, new job congrats.

Ringing in the New Year with a new job, celebrating Christmas with the right girl. It is as though the universe has deigned to smile upon him.

After many years of not.

She was adamant about the no gifiing. In deference, he assumes, to these recent unemployed weeks. Touchy weeks, he went to a few dark places, all the historical stuff burbling in his gut. Lost it a time or two, after a drink too far. He didn’t go mean, though, not to her, he’s been on both sides of mean, he will not perpetrate mean, again. Long steeped in therapized psychobabble, he is well-versed in the typical trajectory of abused to abuser. He will not to become another psychological statistic.

Their first Christmas together, his first holidays with anyone other than hospitality comrades coming off of late shifts, blowing the night’s tips. This anomaly year — his, forced, hers, choice — a Christmas like normal people. A normal couple. A couple with normal expectations: cohabitation, marriage, kids. Or a dog, at least. Unfathomable expectations, but she brings out his most optimistic self.

He is even embracing kale, at her behest. Raw kale.

His most chivalrous self, too, outlaid more cash then ever to squire her around — her friends, too — treat her in the manner to which he assumes her corporate lawyer self is accustomed. She is quick on the uptake, her laugh contains more notes than most symphonies, her breath-taking breasts enticing, consoling, terrifying by turns. She appreciates his puns, even the worst ones. Soul mates, she says, eyes sparkling, sparking a stirring in some unused part of him to believe in something beyond tangible, like fate or destiny.

Now he knows he was right, that time, years ago. Dodged a bullet. Wrong girl, right decision. Her choice, of course, but he pushed. Hard. Her indecision, her disavowed but deeply ingrained Catholicism, holding them both hostage. Someone had to make the hard call, shoulder the blame.

Somehow, despite the odds, he held out for something — better, more — and it is here, within his grasp. As long as he keeps himself from fucking it all up.

His own personal Christmas Miracle wish: That past, atoned. This future, possible.

Our Word-of-the-Day is one of the very first suggestions submitted to WordBowl, delighted I drew it at last.  From the indomitable (and patient!) Amy Willstatter, media-maven, Moxie-Mom, early-edge entrepreneur.

My mother gave birth to two boys as we idled in Houston waiting for my father — retired from MLB at twenty-seven, in need of a new vocation — to plow through pharmacy school; she gave birth twice again as we settled in Mississippi, waiting for my father to inherit a family business.

Great Uncle Ted and Great Aunt Myrtle instigated this scheme for their retirement, for my father to assume his “rightful” role.  They oversaw the construction of our new home, a symbol of our no-longer-peripatetic, now rooted life.

My parent were no BabyBoomHippieCommuners, but the virgin backyard evoked some dormant bucolic dream, they drew up plans, tilled vegetable beds, planted snap bean bushes instead of hedges along the chain link fence. They selected saplings to supplement the towering, spindly pines, these new trees would grow, they claimed, to shade the bay window in the kitchen, Japanese Maples and Magnolias would in time cast dappled shadows on the terraced walkway, a willow would one day weep majestic in the back yard.

Between gardening sessions, my father taught me to throw a baseball, insisting I throw from the shoulder, like a boy, none of this girly from-the-wrist business. Hours we spent throwing, pitching balls to imaginary batters, or, one season, to knock slugs off the tomatoes, the year of an infestation no pesticide proved powerful enough to kill. We planted watermelons that year, too, which grew round as bowling balls and tasted just as sweet.

One year begat a bumper crop of snap beans, our family jammed around the kitchen table, snapping beans until our fingers reddened, an endless parade of beans at dinner, beans swimming in stewed tomatoes, beans glistening with butter and Morton’s salt, beans slathered with cream of mushroom soup, beans with diced frozen carrots, their uniform color and symmetry in sharp contrast to the beans snapped by fingers of varying sizes and strengths, beans boiled, frozen in plastic bags, thawed, cooked limp.

Trees grow more slowly than children, my city-bred parents discovered, and in order to weep, willows must be planted near water. We had maples only slightly taller than the snap beans or my young brothers, magnolias that bore a single blossom, and what we forever dubbed The Happy Willow, branches reaching uproarious to the sky.

The passion for gardening faded, beans supplanted by proper hedges, tomato beds replaced with flowers, sapling-sprouted trees watered and pruned with more prayerful hope than confidence.

PatienceEditGreat Uncle Ted staved off retirement for another year, and then another, my father his second-in-command. My brothers grew, eager for their presumptive baseball birthright, my father taught them to throw, to hit, to catch, the proper way to slide into third, games in which they took turns as pitcher, batter, catcher, shortstop, The Happy Willow serving as second base.

I graduated from college before my father assumed ownership of the family business, inherited the family home with its stoic, stately trees shading the bay windows, just as my parents once envisioned growing for themselves.

WordBowl: jussulent, a delicious term meaning “full of soup or broth”, common vernacular in the early 1600s, falling out of favor around 1658. Our first “dead word” suggested with fervor by 11-year-old Noah, submitted via his Auntie Jasmine.

A burbling, jubilant gumbo is a joy to behold, a wonderland of endless combinations of crawfish, chicken, shrimp, smoked ham, andouille,  a tilt-a-whirl of spices, Old Bay and some secret blend passed from Great-Great Aunt to grandmother to daughter, or in more contemporary eras, packaged powders bearing the images of Paul Prudhomme, Emeril. Spices subtle or BAM! eye-watering heat to sear the senses, with an undercurrent of smokiness, redolent of Bayou waters, crawfish boils, deer stands and campfires. A bewitching concoction of mystical power, capable of calming the most savage of hangover beasts, awakening the senses to appreciate the culinary delights of courses to come, comforting a heartache residing in the gut and soul, too recent to articulate.

Gumbo has been known to unite family amidst varying degrees of feuds in one fell swoop of a spoon.

Mexico has pozole, their sacred soup. Japan, miso. Italy their legendary minestrone, and a fishy analogy to bouillabaisse, the composition of which is a more reliable regional designation than any lines on a map. France, the home of bouillabaisse, the grand-pere of soups. Vietnam, pho. Manhattan and Maine, their warring chowders.

In Mississippi we had no slow-simmering stovetop cauldron, other than a Crock-Pot of white bean soup to accompany the Coca-Cola glazed, pineapple-festooned ham on Easter, we were strictly a Campbell’s family.

Which made the soup tureen puzzling, an inheritance from Great Aunt Myrtle, who I cannot ever recall serving soup in her pristine dining room with cream velvet drapes and delicate lace table runners. Part of the posthumous largess I hauled from the South to my newly adult home of San Francisco in a less-spoken-of-the-better road trip, the ornate serving tureen stood stoic, displayed in an inherited china cabinet in a succession of apartments as I tried on successive lives.  Tureen unloved, as I had yet to find the persona to embrace its vintage value.

Incidentally, there is no indigenous soup of Northern California.

The tureen and accompanying china service for twelve — eight, if doing full place settings, as salad plates and soup bowls shattered throughout the years —along with all the other items inherited too young to fully appreciate, boxed up for the Great Donation Drop-Off in preparation for my cross-country move to Manhattan where I would lack the appropriate square footage to entertain in grand style.

vinsurjussulentNew York City, where I discovered the glories of delivery Chinese and their cornucopia of soups: Hot and Sour, Egg Drop, Wonton. Celebratory Shark Fin, supped in Chinatown, of questionable price and authenticity. In one of the once-grand-gone-to-tourist temples of Dim Sum, I was introduced to the penultimate jewel in the Chinese soup constellation: Soup Dumpling Soup.

Often served o in bamboo steamers, tang bao — diaphanous soup-filled dumplings — on special occasions can be found bobbing, suspended, in an aromatic savory broth. A grand soup, worthy of Great Aunt Myrtle’s serving tureen.

If only knowledge of an ideal soup and possession of an ideal vessel occurred in a convergent moment in time.

The crafting of “jussulent”  required a bit of simmering, first handwritten in the waning Happy Hour sunlight at Maialino (grammercy), revised over a bouillabaisse-friendly Bordeaux at Vin Sur Vingt (west village), edited with a restorative almond milk latte at Nourish (west village).

Today’s WordBowl word is our first non-English term, used as a noun, an intensifier, an insult. Cazzo appears in countless phrases flung at enemies loved ones alike.   

For the literal minded: It means D–k.  So it’s our first profanity WordBowl word.

I was raised in an America that referred to relatives of spaghetti as “noodles”, dumped cans of Chef Boyardee in a pot and called it dinner, crowned Ragu the king of tomato sauces. My knowledge of wine was confined to Blue Nun, a German white with which I celebrated my fifteenth birthday by getting drunk with a monk on our flight to Rome, so I have always associated it with Italy.

How I landed, fresh out of college, a catering sales job for a lauded Italian landmark in the tony Pacific Heights neighborhood of San Francisco, is a bit of a mystery. The greater mystery, to my parents, was why I chucked a mortgage banking offer for food service.

Modeled after Peck’s in Milan, the business was in part a no-reservations café — the lunch lines snaking through the retail store with its beguiling bottles of oils, vinegars, crook-necked wines, take-away fresh prepared foods — as well as a  thriving catering business run out of the offices downstairs.

It was an immersion in the language of food, seasonal produce, imported products. Morning Amaros to settle the stomach, afternoon wine tastings to create perfect pairings.

The waiters and retail counter personnel spoke in a customer-charming hybrid English-Italian, the kitchen staff a staccato English-Spanish-Cantonese-Italian, while my catering van driver shouted combative Italian at inconvenient stop signs, parallel parking spots a scant too short.

I learned shouting did not necessarily equate anger.

The bilingual chef-owner delighted in introducing us to puttanesca (“whore’s spaghetti”) and cosce di manaca (plums known as “nun’s thighs”), reveling in the history of these confluences of — in his mind — the sacred (food) and the profane (religion).

After my first year, a new Sous Chef roared in on his Italian crotch-rocket of a motorcycle, sporting a shaved head and multiple piercings, brandishing tribal tattoos. He snatched sizzling bites from pans bare-fingered, flexing sculpted, scar-seared forearms. He wore tight pants to rival British rock stars.

Dangerous, the proximity to flaming fire, unctuous oils, the exposed flesh of bulbous vegetables. Our overripe world.

During high seasons, we were often the first to arrive, him kneading dough, me reviewing spreadsheets and schedules, us, alone, him in the open kitchen firing ovens and tossing pans, me in the cramped unfinished “offices” that doubled as storage, reworking budgets on what was even then an ancient computer, downing espressos.

He buzzed my phone from the kitchen requesting my presence for a tasting  — whether to taste a dish or a taste of each other left tantalizingly ambiguous — I joined him in the early morning kitchen light, pots steaming, the room already teeming with scent, rosemary and garlic and sweating onions as he massaged whole chickens with olive oil, lifted tasting spoons, licked his lips.

He smelled of smoke and meat and sweat.

You can, I suspect, envision the rest, the dramas both personal and professional.

To this day, whenever I catch a whiff of smoked or roasted chicken, I experience a titillating fission of excitement I pass off to others as mere culinary anticipation.

I dream of po’ boys, flash-fried oysters mashed between toothsome crisp-crusted French Bread, an un-replicable unctuous bite. Muffulettas oozing oil and olives. Beignets smothered in powdered sugar snowdrifts.

The luscious, lyrical meals of my childhood — flour-roux gumbos, Jambalayas, fried soft shell crabs, Black Bottom Pie —forbidden foods as an adult with wheat allergies.

New Orleans and the surrounding areas, my father’s ancestral home, redolent of seafood seawater and slow-simmered spices, where supper plans were hatched over breakfast. Our family visits, after Grandmother Marie passed, centered around meals with my father’s brother Uncle Johnny, Aunt Susie, our five much older cousins.

My father’s eight-years-older brother, Uncle Johnny, was once signed to Detroit, injured in his first pre-season Spring Training, returned to New Orleans without having played a professional ballgame, became a car salesman, dealership owner, Chrysler company man. Everyone in the family drove a Chrysler — except for Great Aunt Dinky, proud owner of successive Mercedes sedans — my parents on the receiving end of Uncle Johnny’s showroom castoffs.

A talker, Uncle Johnny, as verbose as my father was quiet, sucking and jabbing his omnipresent cigarette to punctuate his point, of which he had a few, his wife alone possessed the power to quell his harangues. Aunt Susie, New Orleans native, grew up just blocks from Uncle Johnny and my father, but across the Maginot Line of another Parish, a Parish of the newly arrived, like her family, from Mexico.

imagesWhich explains how amidst the parade of crawfish, red beans and rice, shrimp remolade, hatbox-sized tins of Charles’ potato chips, there was, on any extended New Orleans visit, Taco Night.

Taco Night, Aunt Susie’s sisters joined us, simmering onions and tomatoes, frying soft corn tortillas until puffed crisp and shimmering with oil, peeling paper-skinned things resembling green tomatoes, what I later understood to be tomatillos, but not from my aunts or whatever you would call them, Aunts-in-Law — who spoke rapid-fire Spanish-Cajun-English, a cascade of words flowing fluid from one language to another — as an adult, I learned about “tomatillos” from a chef in San Francisco who specialized in nouvelle interpretations of regional cuisines.

MoonPie-1Aunt Susie and the Aunts-in-Law arranged heaping platters on the long low table with seating for twelve, extra chairs brought in from the garage or the formal dining room, family squeezed so tight elbows bumped, until a rhythm of raise-taco-lower taco-refill-taco-raise-taco was established with our immediate neighbors.  For my siblings and I, the presence of so much food, our portions unsupervised, was dizzying, we ate well past the point of full, and munched on chocolate and lemon Moon Pies afterwards, avoiding our packaged dessert-abstaining father’s silent stares.

Aunt Susie, Uncle Johnny and our cousins moved to Nashville (some Chrysler-opportunity), the end of such gatherings. Despite scattered siblings and cousins drifting back or towards our familial homeland, New Orleans meals henceforth held in hotels or restaurants, the merits of which are debated against the meals of our memories.
